Yesterday's Dinner--Quite Good

Crock Pot Sausage & Potato Soup

INGREDIENTS

1 lb sausage (breakfast type)
4 oz turkey bacon (optional)
6-8 small/medium potatoes, cut in cubes
1 cup onion, chopped
1 large or 3 small carrots, chopped
2 cups oz low sodium chicken broth (plus an extra 2 cups if needed)
3 cups low fat milk
4 tablespoons chicken gravy mix
1 teaspoon garlic powder
1 teaspoon turmeric
1/2 teaspoon black pepper
2 tablespoons dried parsley leaves
2 cups cheddar cheese, shredded
salt and more pepper to taste

DIRECTIONS

Brown sausage (bacon) and onion in a skillet. Drain well.
Place potatoes, and carrot in bottom of crock pot. Add sausage and onion mixture.
Pour chicken broth over vegetables and sausage (bacon).
Dissolve gravy mix in milk and add to soup
Turn crock pot to low and cook 4 to 5 hours until potatoes are done. (Or shorter time on high)
Add more chicken broth if needed
During the last 5 minutes of cooking add cheddar cheese.
Do a taste test for salt and pepper and add, if needed.

Serve and enjoy!
