Bob’s Christmas Pudding

Bob’s New England Healthy Holiday Bread Pudding

About 15 slices of regular-size bread. I like potato bread or Oatmeal Bread.
3 cups skim milk
1 cup sugar free Maple-flavor syrup made with Splenda
Egg substitute for six eggs (almost a cup)
1 tbl. vanilla
1.5 tsp. cinnamon
.5 tsp. salt
1 cup dried cranberries (or golden raisons)

Preheat oven to 350 degrees

Combine all ingredients except bread in large baking dish--at least two quarts.

Break up bread in small pieces into dish

Put in a 1 inch deep pan of water

Bake for about 90 minutes, or until a knife inserted in the center comes out clean

Serve hot or cold, with a topping of a liquor, milk or yogurt if desired.
