We went too a waterfront restaurant in Okee on Lack WI yesterday and terrific fish cakes. So I tried to duplicate them today. Came out very well.
Bob's Fish & Potato Cakes
4 cups cooked fish, shredded
2 cups shredded potatoes
2 cups bread crumbs
1.5 cups flour
1/2 cup chopped onion
1/2 cup eggbeaters or two eggs
1.2 cup light butter
2 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon coriander
Canola oil to fry them in
Cook, drain and shred fish. I have used Haddock and Tilapia
Press thawed potatoes in a colander until drained
Heat tablespoon of oil in fry pan. Cook onion over medium heat until browned. Scrape onto a plate to cool.
Combine onion mix with fish, potatoes, breadcrumbs and flour. Add eggbeaters, spices, and butter.
Form into cakes and fry in oil until brown, 4-5 minutes per side on medium heat.
Serve with cocktail sauce and extra horseradish.
