Cherry Pecan Cake

I found no-sugar-added cherry pie filling at Walmart, so had to try a cake. Took forever to get done, but pretty good. ~Bob

Cherry Pecan Cake - Low Sugar

Ingredients

1 cop eggbeaters or 4 eggs
1 cup vegetable oil
2/3 cup skip/1% milk
2.5 cups Splenda
2 teaspoons vanilla
1 20 oz can of no-sugar-added cherry pie filling
3.5 cups flour]
1 teaspoon baking soda
2 teaspoons baking powder
1 cup chopped pecans

Directions

Preheat over to 350 degrees. Grease a 9x4 loaf pan.

In a large bowl, mix eggbeaters, oil, milk, vanilla and Splenda until smooth. Stir in the cherry pie filling.

In a separate bowl, whisk the flour, baking soda, baking powder and nuts.

Slowly stir into the cherry mixture until well blended.

Pour in pan. Bake for 70-80 minutes until golden and a knife comes out clean.

Allow to cool ten minutes before serving.
